Recipes using Gourds

Here is a recipe for Bún bí xanh thịt bò that you may enjoy:
Ingredients:

1 pound rice noodles

1 pound beef, thinly sliced

1 sponge gourd, peeled and sliced

1 onion, sliced
-
2 cloves garlic, minced
-
1 tablespoon fish sauce
-
1 teaspoon sugar
-
1/2 teaspoon black pepper

1/4 cup chopped cilantro
-
1/4 cup chopped peanuts
Instructions:

Cook the rice noodles according to package directions.

In a large skillet or wok, heat a tablespoon of oil over medium heat. Add the beef and cook until browned.

Add the sponge gourd, onion, and garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.

Add the fish sauce, sugar, and black pepper to the skillet and stir to combine.

Serve the noodles in bowls and top with the beef and vegetable mixture. Garnish with cilantro and peanuts.
